Pie Crust

You can use your favorite pie crust recipe for this pie. I like this pie crust recipe, but it makes enough for two pies so just freeze the other half to make pie another day. You can also keep the pie dough in the fridge for up to 3 days, which you might want to do because I bet you will want to make another blueberry pie after you take one bite. I guarantee it won’t last long.

If you don’t have time to make homemade pie crust, you can use store bought crust. You need a 9-inch pie crust.

Blueberry Pie Filling

The blueberries are the star of this pie. Use the best blueberries you can find! You want plump and juicy blueberries. This pie is especially good in the summer when blueberries are in season. The amount of sugar you add will depend on the sweetness of the blueberries so taste a couple first before adding in the sugar. There is also a little fresh lemon juice in the filling which really makes the blueberry flavor pop! Don’t skip it!

Crumble Topping

Yes, this blueberry pie has a crumble topping and it really makes the pie! You are in for a real treat! To make the crumble topping, combine the butter, flour, sugar, and baking powder. Use a fork to mix until it begins to clump up into pea-size crumbles. A fork works wonders here! Top the pie with the crumble topping and bake until bubbly and golden brown. Your house will smell amazing while it is baking. It is worth turning on the oven during the summertime.

Blueberry Pie Tips

  • This pie is best with fresh blueberries. You will need 4 cups of fruit.
  • Bake long enough for the fruit to break down and begin to bubble.
  • If the pie begins to brown to quickly, place foil loosely over the top.
  • The crumble topping calls for salted butter, which really makes a tasty pie! If you don’t have salted butter, add some salt to the crumble topping mixture.
  • Allow the pie to cool for at least 4-6 hours before slicing if you want clean pie slices. I know, this step is SO hard, but this pie is worth the wait, I promise! And if you don’t care if your pie is a little messy, dig right in. I won’t tell anyone:)
  • Serve vanilla ice cream or whipped cream on the side for an extra dreamy dessert!

Prep Time 20 minutes mins

Cook Time 45 minutes mins

Total Time 1 hour hr 5 minutes mins

Ingredients

For the pie:

  • 1 9-inch prepared pie crust
  • 4 cups blueberries
  • 1/4 cup all-purpose flour
  • 1/4 cup to ⅓ cup granulated sugar depending on the sweetness of your fruit
  • Juice of 1 lemon about 2 tablespoons
  • Pinch of sea salt

For the crumble topping:

Instructions

  • Preheat oven to 350 degrees F.

  • Gently roll your pie dough to fit a 9-inch pie dish. Press or crimp the edge of the crust.

  • In a large mixing bowl, combine the blueberries, flour, sugar, lemon juice, and salt. Gently stir. Make sure the berries begin to break down and the sugar has melted with the lemon juice to create a slurry-like mixture with the blueberries. Pour the blueberry mixture into the pie crust.

  • To make the crumble, combine the butter, flour, sugar, and baking powder. Use a fork to mix until it begins to clump up into pea-size crumbles. Pour the crumble evenly over the blueberry mixture in the pie.

  • Place the pie on a baking sheet (to catch any juicy bubble-over) and bake for 45-60 minutes or until the blueberries are bubbling through the crumble topping. Remove from the oven and let cool before cutting.

FAQs

Should I prebake my pie crust for blueberry pie? ›

Pre-baking the pie crust is only required when making a custard pie OR when making a fresh fruit pie.

How do you keep blueberry pie from being runny? ›

Berry pies need starch to help thicken the filling because berries give off a lot of juice when they cook. For a typical nine inch pie, you need two tablespoons of flour, cornstarch, or tapioca starch. Tapioca is best because it sets clear, which let's the filling look bright and glossy.

What is blueberry pie filling made of? ›

Place 3 pints blueberries, sugar, water, cornstarch, and cinnamon in a saucepan; cook and stir over medium-low heat until sugar is dissolved and mixture is slightly thickened, 10 to 15 minutes. Remove saucepan from heat; gently stir in butter and remaining 1 pint of blueberries so blueberries stay whole.

How do you make a berry pie not soggy? ›

Try sprinkling graham cracker crumbs inside your bottom crust; they soak up some of the juices released from fruit during baking. I have also used ground cookie crumbs on the bottom of the crust before adding the fruit.

Why is my blueberry pie soggy? ›

If the bottom crust doesn't set before the filling soaks in, it's going to be gummy. A metal pie pan placed on a preheated surface will set the bottom crust quickest; once cooked, the liquids from the filling above won't soak in, and as a result: no soggy bottom.

How do you keep pre baked pie crust from getting soggy? ›

Blind Bake

The most common way to ward off a soggy pie crust is by a process called blind baking. Blind baking means you pre-bake the crust (sometimes covered with parchment or foil and weighed down with pie weights to prevent the crust from bubbling up) so that it sets and crisps up before you add any wet filling.

What is the best thickener for berry pies? ›

Very often flour or cornstarch is used, but in certain instances tapioca, arrowroot and potato starch can also help achieve the desired consistency. Tapioca starch is preferable for products that will be frozen because it will not break down when thawed. We like tapioca in blueberry, cherry or peach pies.

Should you poke holes in bottom of pie crust? ›

With docking, the holes allow steam to escape, so the crust should stay flat against the baking dish when it isn't held down by pie weights or a filling. Otherwise the crust can puff up, not only impacting appearance but also leaving you with less space for whatever filling you have planned.

How to know when blueberry pie is done? ›

A fruit pie is ready to be pulled from the oven when its juices are bubbling in the center of the pie, not just the sides! Especially if it is a very juicy pie, make sure those bubbles are have a slower, thick appearance to them, as opposed to the faster, more watery bubbles that appear on the edges of a pie at first.

Why put butter in pie filling? ›

A: Dotting the top of a fruit pie filling with butter is an old habit but one that is called for in only about half of the pie recipes out there. Some maintain that the butter is for taste; others claim that it helps the filling set up, particularly when using flour as a thickener.

What does adding egg to pie filling do? ›

Adding an extra egg gives the pie a cake-like consistency.

There was a very thin shiny top layer, but the rest of the filling was a consistent light-orange color.

Why do you put cornstarch in pie filling? ›

Cornstarch has thickening power similar to Instant ClearJel. Like flour, it lends a cloudy, semi-transparent look to filling. It can also give filling a starchy taste. For full effectiveness, make sure the pie filling is bubbling up through the crust before removing your pie from the oven.

Should you pre-bake the bottom crust of a fruit pie? ›

There are a few instances, actually. You need a par-baked or fully baked crust if you're making quiche, no-bake pie, custard pie, cream pie, pudding pie, or simply want an extra-crisp pie crust. If you're making a pie that doesn't require a baked filling, you still need a baked crust.

How do you get a crispy crust on the bottom of a pie? ›

Choose the Right Rack in the Oven

Which rack you use in the oven can help ensure a crisp crust. Baking the pie on a lower rack will concentrate heat on the bottom of the pie and help the crust crisp.

Why did my blueberry pie not set? ›

It needs at least 2 hours to finish setting up after you pull the hot pie out of the oven. If you cut into a hot fruit pie right away, it's definitely going to be runnier than if you let it set up all the way. Another reason why blueberry pie might be runny is that it just didn't bake long enough.

Should you blind bake pie crust for fruit pies? ›

Partially bake a pie crust if your crust needs longer in the oven than the pie filling, such as brownie pie or quiche. And if you want an extra-crisp pie crust for your apple pie, you can partially blind bake the crust before adding the filling.

Is it necessary to pre bake pie crust? ›

Pre-baking is a must if you're looking for a flaky pie crust. It's especially helpful for recipes with a wet center. Recipes for most tarts, pies, and quiches call for pre-baking to ensure that the final product doesn't end up soggy.

Why would you Precook the fruit for pie filling? ›

Pre-cooking your filling basically allows you to control the juiciness before it goes into the oven, so there are no major surprises when it's time to bake.

How do you Prebake a pie crust without shrinking it? ›

Higher temperatures make the gluten in pie crusts tighten up and shrink a bit. So if your recipe requires pre-baking the pie crust, it will shrink less if you bake it “low and slow” (around 350 degrees F).
